Oh boy, you guys are in for a treat with this one! Creamy, cheesy enchiladas stuffed with shredded chicken, spinach, corn, and chiles; served up with some Mexican rice and refried beans – to die for! I love sour cream enchiladas – they are one of the first dishes (other than nachos and quesadillas) that I started eating when I began to get over my fear that all Mexican food was spicy. (more…)

Curried Chicken Salad
This is super, super easy to make and incredibly delicious. I made a huge bowl this week and it was gone in two days! It takes plain old chicken salad over the top and turns it into something great. (more…)
Braised Pork with Apricots
I bought a huge 10 lb pork shoulder at the store a while back when I was making pulled pork – it was the only pork shoulder available in the whole store! So I took it home, butchered it and cut it into three sections and froze two of them. I used one of the sections to make yummy carnitas, but I wanted to do something new with the last piece. That is where my Essentials of Slow Cooking cookbook came in handy, and I found this recipe for pork that is slow simmered in broth and orange juice with apricots, thyme, and mustard for a sweet and savory treat. Japanese Braised Salmon
More salmon! I am always questing for tasty salmon recipes so that we will eat more of this super healthy fish (note that it is only super healthy when it is wild caught Pacific/Alaskan; farm raised Atlantic salmon is full of toxins). Continuing from Part 1, which covered cookware and bakeware, I am going to list my favorite kitchen products. In this post I will be covering Tools and Cutlery. Most of my links will be to Williams Sonoma, because that is where I buy my products, but you can find the same or similar items at Sur La Table, Macy’s, and even Amazon.
Cook’s Tools
You will need an assortment of wooden spoons, whisks, spatulas, ladles, tongs, etc… I won’t go into super detail on these except to remind you that if you are using nonstick pans you must use wooden or silicone tipped tools. Here are links to good whisks, tongs, and spatulas for that purpose.
My Favorite Products Pt 1
A good friend recently suggested that I make a post about all my favorite kitchen products – what a great idea! Between being an avid home cook and working at Williams Sonoma, I think that I have built up a pretty good repertoire of knowledge on kitchen items. I am going to split this into several parts (because otherwise it will get way too long). So here it is, a list of my favorite products:
Cookware
The basic pans that you will need are a small and large frying pan, a large saute pan, a small and large saucepan, and a large stockpot. Stainless steel is the best all purpose option – it creates a good sear and will last forever.
Sushi Cake – Sweet City Desserts
This is the cake I bought for my recent birthday – and yes, it looks like sushi! This is seriously the most beautiful/coolest cake I have ever seen. I saw it on display at Sweet City Desserts in Vienna and just had to have it! (more…)
