Vegan Holiday Cookies

Well Dined | Vegan Holiday Cookies

My dear friend Keerin and I had a wonderful cookie making night.  We each chose a couple of recipes to make and then divided up our creations to give to friends.  Here’s the thing, though, Keerin is vegan.  So we made all of our cookies with no dairy or egg!  (Except for those Hershey kisses, which she didn’t mind but you can leave off.)  And you know what?  I couldn’t even tell that they were vegan – they weren’t lacking in anything!

The recipes that I chose were a Mexican Hot Chocolate Snickerdoodle and Molasses Spelt Cookies with Candied Ginger.

Keerin chose Russian Tea Cakes, Oatmeal Thumb Prints, and Peanut Butter Blossoms.

Whichever you choose to make, you won’t be disappointed! (more…)

SRC Pasta with Veal, White Wine, and Capers from Oh! You Cook!

Well Dined | Pasta with Veal, White Wine, and Capers

For this month’s Secret Recipe Club, I was assigned Oh! You Cook! (Which is such a cute name.)  In addition to writing the blog, Dena has also authored The Everything Kosher Slow Cooker Cookbook – how cool is that?!  As you can imagine, her recipes are kosher, but that doesn’t mean that you have to be in order to enjoy them!

I was, of course, very interested in the Challah Bread Pudding, and a couple of other desserts including Blueberry Pudding Pie, Raspberry Custard Pie, and Almond Rice Pudding.  But I really wanted to make something savory.  I loved that she had several recipes that used pomegranate molasses, and ingredient that I love and am always looking for uses for.  And the Picadillo Meat Loaf and Honey Mustard Chicken looked very weeknight friendly.

But in the end, I chose the Orecchiette with Veal, Capers, and White Wine.  It looked so good (and easy) that I couldn’t pass it up.

Sausage and Apple Stuffed Acorn Squash

Well Dined | Sausage and Apple Stuffed Acorn Squash

A little bit sweet, a little bit savory, a little bit herby and cheesy – this yummy dish looks gorgeous and tastes amazing, plus it is low carb!  Both the husband and I loved it, which is sometimes difficult to achieve.  So I call this one a winner!

Well Dined | Sausage and Apple Stuffed Acorn Squash

Start by roasting some squash halves (keep in mind that the full recipe uses 2 whole squashes, even though I only show 1).

Meanwhile, make the filling by sauteing onion, celery, garlic, and herbs; browning crumbled sausage; and then adding apple. (more…)

Local Favorites – Chantilly, VA

I wanted to give a quick shout-out to a couple of my favorite local establishments in Chantilly, VA.

Well Dined | 5T*Ice

First up is 5T*Ice, an Asian dessert shop at Dulles Landing.  I used to frequent Tutti Frutti, owned by the same people, but 5T opened much closer to where I live. Yay! In addition to frozen yogurt and gelato (including hard-to-find durian), they serve Patbingsu – shaved ice topped with ice cream, fruits, and syrups.  I really like the coconut and ube bingsu with coconut shavings, sweetened condensed milk, and ube ice cream.

They also have bubble tea, smoothies, milkshakes, and other various similar drinks.  I really like the Che Thai – a Vietnamese drink with coconut milk, grass jelly, coconut jelly, pomegranate jelly, lychee, jackfruit, and toddy palm.  It is crazy good.  If sweet is not your thing they also have steamed pork buns, sticky rice with Chinese sausage, and other goodies.  And, no, I don’t know what the name means – no one I know does!
