Leftover Roast Beef Sandwiches


So you have made a delicious fancy holiday meal and you have left over roast beef – what do you do with it? Make roast beef sandwiches of course!


Slice that beef up really thinly, which is easier to do once it has been in the fridge overnight.


Throw it on the griddle with some butter and let it get nice and crispy on the edges. Pile it up on some fluffy toasted buns with some horseradish sauce and you are good to go!

Valentine’s Day 2012

I LOVE Valentine’s Day, I really do. I didn’t before I met Jasper, but now that I have someone to share it with I love to have a day to just appreciate and treat each other. We like to spend it at home so that we aren’t distracted by other people/things, or feel like we have to act a certain way. So I spend all day cooking and setting up and we have a wonderful romantic dinner together.

Mediterranean Salad


This salad is packed with a ton of flavor, and all the vegetables make sure that it is actually a healthy salad. For those who don’t know – it is easy for a salad to get out of control with cheese and dressing and restaurant salads can have well over 1000 calories. This salad doesn’t need a whole lot of dressing, b/c the ingredients have a lot of flavor. Also – Feta cheese is low-fat and it has a strong flavor, so you don’t need to use much. (more…)

Semi-Homemade Dinners

I, like most people out there, do not make gourmet meals every day. In fact, a lot of the time I cook what’s affordable, easy, and comforting. I have a collection of recipes that foodies may snub because they are old fashioned – like casseroles – or use pre-packaged ingredients. I am not ashamed of these things because, hey, sometimes it’s hard to get food on the table. So here are some recipes that I can depend on to save me when I am low on time, money, and energy.

Beefy Noodle Bake

Sourdough Pancakes


Sourdough pancakes may sound strange to you, they certainly did to me the first time I heard about them, but they are a special treat in my husband’s family. They are thin, almost crepe-like (or they should be anyway, I haven’t managed to get mine that thin yet) with a little bit of sourdough tang. They take quite a bit more work than your average pancake, but for my husband (who craves this childhood favorite) it is totally worth it. (more…)
