Classic French Toast

Well Dined | Classic French Toast

I love to make French Toast this time of year.  My husband loves it, too, he says that my French Toast is the best (so sweet <3).  I think the secret is to definitely use brioche or challah, that plus a million ingredients in the batter – read on!

Well Dined | Classic French Toast

In addition to eggs and cream, I use vanilla, cinnamon, nutmeg, orange juice, lemon zest, and sherry.  So many flavors!  It is so worth it.  But I’m getting ahead of myself.  First, either slice the bread (thickly, 1 inch) the night before and leave it out to get stale, or toast it slightly in the morning.  Then make the batter and soak each side of the bread for 10 minutes.  Just before you cook the toast (in butter, of course), sprinkle one side with granulated sugar – this will created a yummy bit of caramelization.  Do the same to the other side before you flip it over to cook.

Top with lots of butter and some maple syrup.  Yum.  This is definitely the perfect French Toast – custardy in the middle, little bit of caramelization, lots of flavor. (more…)

Vegan Holiday Cookies

Well Dined | Vegan Holiday Cookies

My dear friend Keerin and I had a wonderful cookie making night.  We each chose a couple of recipes to make and then divided up our creations to give to friends.  Here’s the thing, though, Keerin is vegan.  So we made all of our cookies with no dairy or egg!  (Except for those Hershey kisses, which she didn’t mind but you can leave off.)  And you know what?  I couldn’t even tell that they were vegan – they weren’t lacking in anything!

Well Dined | Vegan Holiday Cookies

The recipes that I chose were a Mexican Hot Chocolate Snickerdoodle and Molasses Spelt Cookies with Candied Ginger.

Keerin chose Russian Tea Cakes, Oatmeal Thumb Prints, and Peanut Butter Blossoms.

Whichever you choose to make, you won’t be disappointed! (more…)

SRC Pasta with Veal, White Wine, and Capers from Oh! You Cook!

Well Dined | Pasta with Veal, White Wine, and Capers

For this month’s Secret Recipe Club, I was assigned Oh! You Cook! (Which is such a cute name.)  In addition to writing the blog, Dena has also authored The Everything Kosher Slow Cooker Cookbook – how cool is that?!  As you can imagine, her recipes are kosher, but that doesn’t mean that you have to be in order to enjoy them!

I was, of course, very interested in the Challah Bread Pudding, and a couple of other desserts including Blueberry Pudding Pie, Raspberry Custard Pie, and Almond Rice Pudding.  But I really wanted to make something savory.  I loved that she had several recipes that used pomegranate molasses, and ingredient that I love and am always looking for uses for.  And the Picadillo Meat Loaf and Honey Mustard Chicken looked very weeknight friendly.

But in the end, I chose the Orecchiette with Veal, Capers, and White Wine.  It looked so good (and easy) that I couldn’t pass it up.

Start by sauteing onion and garlic, browning the veal, then adding the white wine and allowing it to cook out. (more…)

Sausage and Apple Stuffed Acorn Squash

Well Dined | Sausage and Apple Stuffed Acorn Squash

A little bit sweet, a little bit savory, a little bit herby and cheesy – this yummy dish looks gorgeous and tastes amazing, plus it is low carb!  Both the husband and I loved it, which is sometimes difficult to achieve.  So I call this one a winner!

Well Dined | Sausage and Apple Stuffed Acorn Squash

Start by roasting some squash halves (keep in mind that the full recipe uses 2 whole squashes, even though I only show 1).

Meanwhile, make the filling by sauteing onion, celery, garlic, and herbs; browning crumbled sausage; and then adding apple. (more…)

Local Favorites – Chantilly, VA

I wanted to give a quick shout-out to a couple of my favorite local establishments in Chantilly, VA.

Well Dined | 5T*Ice

First up is 5T*Ice, an Asian dessert shop at Dulles Landing.  I used to frequent Tutti Frutti, owned by the same people, but 5T opened much closer to where I live. Yay! In addition to frozen yogurt and gelato (including hard-to-find durian), they serve Patbingsu – shaved ice topped with ice cream, fruits, and syrups.  I really like the coconut and ube bingsu with coconut shavings, sweetened condensed milk, and ube ice cream.

They also have bubble tea, smoothies, milkshakes, and other various similar drinks.  I really like the Che Thai – a Vietnamese drink with coconut milk, grass jelly, coconut jelly, pomegranate jelly, lychee, jackfruit, and toddy palm.  It is crazy good.  If sweet is not your thing they also have steamed pork buns, sticky rice with Chinese sausage, and other goodies.  And, no, I don’t know what the name means – no one I know does! SRC – No Bake Eggnog Pudding Pie from I am a Honey Bee

Well Dined | No Bake Eggnog Pudding Pie

I’m gonna be honest with you guys – I totally messed up this pie, in three different steps. Ugh. More on that later. But as it turns out, it didn’t even matter – it still came out super delicious!  So I definitely call that a win.

We are doing a special Holiday Treats edition of the Secret Recipe Club!  My assigned blog was I am a Honey Bee written by Nicole.  We both live on the East coast and share a love of Buffy, tattoos, Greece, eggs bene, and a fear of open water and having to open gifts in front of others.  I like that her blog includes reviews in addition to recipes, just like mine!

Anyway, I went to look for desserts on her blog and noticed a page called The Year of Pies, where she posted a pie recipes every week for a year.  A year!  I didn’t to look at any other category, ladies and gentlemen, I was home.  But would it be caramel pie? One of four different kinds of chess pie?  Maybe Reese’s or Thin Mint pie?  So many to choose from!  It was around this time that I began to feel woefully inadequate for my own dessert selection, and sorry for whoever drew my blog…  I hope you were able to find something!

I scrolled down to the end of the year to look for holiday dessert and saw this No Bake Eggnog Pudding Pie.  I love eggnog!  And easy recipes!  I wanted to make this right away. (more…)

Balsamic Honey Mustard Roasted Brussels Sprouts with Bacon

Well Dined | Balsamic Honey Mustard Roasted Brussels Sprouts with Bacon

I want to A) introduce you to my “famous” brussel sprout recipe and B) apologize for the terrible photos that I don’t have time to re-take if I want to get this recipe out to you before Thanksgiving.  I call this recipe famous, because my husband requests it all the time.  My husband who does not like vegetables. *EDIT – Jasper has informed me that he does too like vegetables!*  This week he asked me if we could have steak and brussels for dinner, or even just brussels, and I just about fell over in shock.  Let’s roast some brussels sprouts!

Well Dined | Balsamic Honey Mustard Roasted Brussels Sprouts with Bacon

Trim and halve some sprouts, chop some bacon, and toss them around in olive oil, salt, and pepper.  Roast for 30 minutes.  So far – pretty easy, right?

When they are done, toss in a dressing of balsamic vinegar, honey, and stone ground mustard.  The end.  Seriously, that’s all there is too it!  They are tender and crispy, sweet and savory, and pretty much just all-around awesome.  Whether you make these for your holiday spread or a weeknight dinner – enjoy! Corn Pudding

Well Dined | Corn Pudding

Corn pudding (or spoonbread) is one of my favorite Thanksgiving sides, and I love this recipe in particular because of how easy it is.  There is a little bit of sauteing involved, but then everything goes into a blender, and then directly into the baking dish – easy.

Well Dined | Corn Pudding

Cream, butter, eggs, corn, sauteed onions, and a bit of flour and sugar – what’s not to love?

Well Dined | Corn Pudding

It is kind of like a corn souffle that’s a little bit sweet, and really buttery.  It’s hot and soft and creamy and kind of melt in your mouth.  I made it for a friend that had never had it before and totally made a believer out of her.  So let’s make this beauty! (more…)
