I always see these beautiful steak pinwheels at the grocery store and was wondering if I could make them myself. It turns out that it isn’t that easy – but stuffed with boursin cheese, spinach, and artichokes these sure are tasty! Sour Cream Chicken Enchiladas Take 2
A while back, I posted a super tasty enchilada recipe. Now that I am practicing healthier eating habits, I wanted to revamp that recipe to be lighter. I used whole wheat tortillas, fat free sour cream, fat free soup, and reduced fat cheese and they tasted just as great as the original!
Before I get into the main part of the recipe, I want to talk about a basic technique that I use all the time. A lot of my recipes call for “cooked, shredded chicken”. You could acquire that in a number of different ways (and in fact, shredding a rotisserie chicken is one of the easiest) but I want to show you my favorite method. I like to poach big batches of chicken at a time (especially when I see a bulk pack on sale), shred it, and freeze it so that I always have some on hand.
To do this, place boneless skinless chicken in the bottom of a large pot. Toss a quartered onion, carrots (no need to peel), celery, garlic, peppercorns, a bay leaf, and herbs over the top. I like to use thyme and this year I grew some myself! Cover with water (just the chicken, the veg can be floating), bring to a boil, then quickly reduce the heat to low so that the water is barely at a simmer. Partially cover and gently simmer for 10 minutes. Then turn off the heat completely, and allow chicken to sit in the hot water for another 15-20 minutes. Doing it this way prevents is from being overcooked and keeps it moist and tender. (more…)
4th of July
It’s a little late, I know. But I did some cool things for the holiday that I thought would be worth sharing.
First up, burgers:
I thought that mixing shredded cheddar and diced bacon into the burgers themselves instead of using them as a topping would be pretty tasty, and I was right! I also added in pepper, onion powder, garlic powder, mustard powder, and paprika (no salt b/c I figured the bacon would be enough). I didn’t really measure, but you can get an idea for the proportions here.
Next up – jello shots!
I am kind of obsessed with jello shots right now. Not the kind you made in college in the little cups that tasted like Everclear, but the fun, creative, tasty kinds found on Jelly Shot Test Kitchen. These are solid enough to stand on their own in little cubes (or whatever shape you cut them into). I haven’t gotten too fancy with cutouts and shapes yet, but I am getting pretty good at doing layers. (more…)
Zucchini, Pea, Mint, and Feta Tart
I am so excited about zucchini season it isn’t even funny. I have literally been dreaming about zucchini! The very first thing that I wanted to make was this gorgeous vegetable tart. Flaky, buttery puff pastry is topped with thinly shaved zucchini, bright peas, tangy feta, and fresh mint. Yum, oh yum. (more…)
Recipe Showdown: Chicken Crescent Rolls and Hashbrown Casserole
Cruising around on Pinterest I found two very similar recipes for crescent rolls stuffed with chicken, and another two for a casserole made with hashbrowns. In each case, I couldn’t decide which recipe I preferred over the other; so I decided to settle it with a recipe showdown. I would make one pair of recipes one week, and the other the next, in order to decide the winners. (Note that none of these recipes are particularly healthy…) (more…)
Spinach, Artichoke, and Chicken Casserole
I am obsessed with all things spinach and artichoke right now, it must be Spring getting to me. Tossed in a casserole with chicken, pasta, and cheese these veggies become instant comfort food (similar to my long time favorite Spring Shells casserole). This comes together quickly and only needs to bake for 10-15 minutes, just enough to brown the top (all the ingredients are already cooked). (more…)
Food and Flix – Big Night
Last week, I stumbled upon this really cool concept blog called Food ‘n Flix that invites bloggers to watch a movie, make a dish inspired by the movie, then blog about it. This month, the movie is Big Night (hosted by Spabettie) starring Stanley Tucci and Tony Shalhoub as two hilarious Italian brothers that own a restaurant together. In order to save the restaurant from bankruptcy, they risk everything they have on one extravagant dinner to impress a celebrity singer.
I loved the movie, it was cute and funny and well acted, and it made me SO HUNGRY. It inspired me to make a Tricolore Lasagna in the colors of the Italian flag (green, white, and red). (more…)
Beefy Macaroni and Cheese
Who doesn’t love macaroni and cheese? Seriously. Because I do. I even love the kind from the box, powdered cheese and all (I know it’s wrong, don’t hate me). Growing up, Hamburger Helper was a special treat that we would get really excited for – so when I found this recipe for a homemade version, I couldn’t wait to try it. (more…)
Anniversary Dinner
A few weeks ago, we celebrated our 2nd Wedding Anniversary! We went on a lovely trip to Texas over the weekend, but our actual anniversary fell on a Tuesday. We had plans to eat at some very nice restaurants on our trip, so we decided to stay in on our anniversary and have a nice home-cooked meal. I made steak with compound butter, spinach and Gruyere souffle, and vanilla bean panna cotta with mixed berries. (more…)
Spring Quiche
Spring vegetables are delicate and fresh and I think that one of the best ways to utilize them is in a quiche. Fluffy eggs, creamy cheese, and flaky buttery crust – what’s not to love? I used spinach and leeks this time, but zucchini and asparagus work great too! (more…)
