It’s cocktail time! Remember the Orange Creamsicle Cocktail? Well, it was so popular that my friends wanted to make a similar cocktail, but Lemon Meringue Pie themed. And I was happy to oblige!
Lemon Meringue Cocktail
a Well Dined original
makes 1 cocktail
3 oz lemon-lime soda
1 oz Limoncello liquor
1/2 oz whipped cream flavored vodka
1/2 oz marshmallow flavored vodka
1 tbsp sweetened condensed milk
whipped cream
ice
Add Limoncello, vodka, and sweetened condensed milk to a rocks or lowball style glass, stir to combine.
Add ice and soda, stir again. Top with whipped cream.

My friend made this Orange Creamsicle Cocktail for me and it was so good that I absolutely had to share it with you guys! It is super easy to make and tastes EXACTLY like an orange creamsicle. Enjoy!
Orange Creamsicle Cocktail

I have a group of girlfriends that get together on a regular basis and take turns providing snacks and drinks. A few of them have a mighty sweet-tooth (we call them hummingbirds); so I knew that when it was my turn to bring a cocktail, I wanted to make something sweet. I found a quick and easy cocktail recipe that is sure to please lovers of sweets (especially cookies) – the Snickerdoodle Martini. It also features one of my all-time favorite liquors, RumChata.
Snickerdoodle Martini

serves 4
cinnamon sugar (I use 8 parts sugar to 1 part cinnamon, some people use 4:1)
honey
12 oz half and half
4 oz RumChata
4 oz vanilla vodka
2 tsp powdered sugar
dash cinnamon
Pour cinnamon sugar onto a small plate, and honey onto another. Dip the rims of 4 glasses into the honey, then the cinnamon sugar.
In a cocktail shaker, pour remaining ingredients over ice. Shake until chilled and mixed well.
Divide evenly among cinnamon sugar rimmed glasses and enjoy!
Eggnog ice cream – why have I never thought of that before?! With the eggs, cream, and sugar – it’s the perfect base! Creamy, spicy, and delicious – this is the perfect winter ice cream. And it’s even better topped with fresh espresso as an affogato!
Eggnog, cream, orange extract, nutmeg, cinnamon, and rum come together to form the base; which freezes up soft and creamy.
To take it to the next level, pour a espresso over the ice cream to make an affogato.
Two scoops and a lungo or double-shot is the perfect amount for breakfast or a snack. It look’s like we might be getting another snow storm out here in the NE, and I know what will be keeping me warm!
Eggnog Ice Cream

Buy the fattiest, full-of-sugar eggnog that you can find because it will make the best ice cream.
2 cups eggnog (no rum added)
1/2 cup heavy cream
1/4 tsp orange extract
1/4 tsp ground cinnamon
1/4 tsp nutmeg
1 1/2 tbsp dark rum
Combine all of the ingredients in a medium bowl and whisk to combine. If eggnog and cream were refrigerated, you may pour the mixture directly into an ice cream maker. If eggnog and cream were not fully chilled, place in a refrigerator until mixture is chilled (1 to 2 hours).
Once mixture is chilled and in the ice cream maker, freeze according to the manufacturer’s instructions. Scoop into a freezer safe container and place plastic or parchment over ice cream (to prevent ice crystals) and freeze until firm, at least 4 hours.
