It’s time for this month’s Secret Recipe Club!  I was assigned Cookin’ Mimi – a blog full of comfort food and home cooking with lots of influences like Southern, Southwestern, and some International.  The author is a Southern Californian with a Southern family – which explains the variety of influences!  She doesn’t remember a time when she wasn’t cooking.

I was in crunch mode when I chose a recipe, on the search for an easy dinner.  Mimi is a big fan of casseroles, like me, so I looked at this Cheesy Broccoli Chicken and Rice Casserole and this traditional Chicken and Rice Casserole, but decided on this Cheesy Green Chile Chicken and Rice Casserole.

I also scrolled through the desserts quickly and saw Pineapple Upside Down Cake Ice Cream, Coconut Tres Leches Cake, and Pina Colada Poke Cake.  Clearly I’m in a tropical mood.

But back to the casserole!  It is really straightforward and simple – combine chicken, green chiles, rice, and a sour cream sauce; top with cheese; bake; the end.  But something in the recipe jumped out at me as unfamiliar – it called for par-boiled or converted rice.  What the heck is that?  I turned to the internet and found out that by par-boiling the rice, the nutrients of the outer parts are forced into the grain before they are removed – making it something in between brown and white rice.  In fact, it supposedly has most of the nutrients of brown rice, an even lower glycemic index, and the soft texture of white rice, without getting as mushy.  How had I never heard of this before?!  It is perfect to use in casseroles and slow cookers because the texture holds up.  It’s awesome!

But, there is a downside – unless you are ordering it from Asia, most brands are grown in the Southern US and have high levels of inorganic arsenic, which is toxic.  So, you know, don’t eat a ton of it all the time. (more…)

I have recently joined a group called Improv Cooking Challenge (see my first post here), where we are assigned 2 ingredients to incorporate into a dish each month.  This month, the challenge was garlic and rosemary – perfection!

I chose to make a simple pasta with shredded rotisserie chicken, garlic, and rosemary; tossed together with starchy pasta water and Parmesan to make a light sauce.  Five ingredients, 30 minutes, easy and delicious.  You’re welcome, world! (more…)

SRC – Golden Nectarine Cake from Smells Like Brownies

It’s Secret Recipe Club time!  And this month I was assigned the blog I’ve been waiting for – Smells Like Brownies by my best friend, Melissa! Yay! You may recognize the name, because we cook lunch together every week, and I often blog about it.  Melissa is a stay-at-home mommy to a very active little boy, and a precious baby girl.  She is devoted to her family and God in a way that is truly inspirational, as well as being a phenomenal baker and photographer.  She’s just the best and I am so excited to share her blog with you!

Eliminating SRC posts and dishes that we made together narrowed down the field quite a bit, but I still had no trouble finding a ton of things I wanted to make.  I actually intended to make several dishes and blog about each of them, but I kept getting sick and injured this month and had to narrow it down to the number one thing I wanted make – this gorgeous Golden Nectarine Cake.  Which is kind of hilarious because Melissa hates fruit, so I doubt she even got to try this cake.

The rest of my top “to-try” dishes (which are all vegetarian, because Melissa is a vegetarian) are Debby’s famous Mac and Cauliflower with Ritz Crust (because I’ve heard her talk about it so many times), this Broccoli and Purple Potato Gribiche (that I’ve been drooling over since she posted it), Monster Green Pea Burgers, Lemongrass Coconut Noodles, and Couscous-Stuffed Eggplant with Tahini Sauce.

Let’s get back to that cake!  I loved this recipe because it was easy for a non-baker like me to follow.  Start with two nectarines and slice them into wedges.  Is there anything more summery than stone fruit? (more…)

Quinoa and Kale Crustless Quiche

Here is a dish that is simple, easy, healthy, and totally delicious.

All you do is mix together cooked quinoa, wilted kale, caramelized onions, eggs, and cheese; then bake until set.

It sets up a bit like a frittata.  So simple!

Quinoa and Kale Crustless Quiche
adapted from Food 52
serves 4-8

1/2 cup quinoa
1 cup water
2 tbsp olive oil
1 bunch kale, stems removed and cut into ribbons
1 sweet onion, thinly sliced
2 cloves of garlic, minced
1/2 cup shredded white cheddar cheese (or whatever you like)
3 oz reduced fat cream cheese (or Laughing Cow), cubed
4 eggs
salt and pepper to taste

Preheat the oven to 350 and prepare a 9″ pie dish (either butter the dish thoroughly or spray with baking spray).

Rinse the quinoa.  Combine the quinoa and water in a pan.  Bring to a boil on medium-high heat and then reduce to a simmer.  This will take about twenty minutes.  Set aside.

Meanwhile, start to caramelize the onions.  Heat the olive oil in a large saute on medium heat.  When the oil is shimmering, add the onions.  Slowly cook until the onions are soft and browned.  Remove the onions from the pan, and place them in a large mixing bowl.

Add the kale into the hot onion pan.  On medium heat, cook until the kale is wilted and bright green, about two minutes.  Allow the greens to cool.  Squeeze out any extra liquid using a sieve or a clean dish towel.

Add the kale, quinoa, garlic, cream cheese and cheddar to the mixing bowl.  Stir the ingredients so that they are evenly distributed.

In a small bowl, whisk the eggs so that they are well combined.  Pour over the quinoa/kale mixture.  Stir until the egg clings to the greens.  Add salt and pepper.

Pour the mixture in the prepared pie dish.  Bake for about 45 minutes, until the top is golden and the pie has started to pull away from the edge of the baking dish.  This dish is delightful hot, but even better at room temperature.
