Sausage and Apple Stuffed Acorn Squash

Well Dined | Sausage and Apple Stuffed Acorn Squash

A little bit sweet, a little bit savory, a little bit herby and cheesy - this yummy dish looks gorgeous and tastes amazing, plus it is low carb!  Both the husband and I loved it, which is sometimes difficult to achieve.  So I call this one a winner!

Well Dined | Sausage and Apple Stuffed Acorn Squash

Start by roasting some squash halves (keep in mind that the full recipe uses 2 whole squashes, even though I only show 1).

Meanwhile, make the filling by sauteing onion, celery, garlic, and herbs; browning crumbled sausage; and then adding apple.

Food ‘n Flix: Butter

Well Dined | Food 'n Flix: Butter

I finally got my act together in time to post for Food 'n Flix, ha!  I really need to work on that!  Anyway, this month's movie is Butter - hosted by Cheap Ethnic Eats.  This hilarious movie is about wealth, race, privilege, power, family, small town America, and (of course) butter.  I'd seen it before, and enjoyed it so much that I didn't mind renting it again just to look for food references.  Which, by the way, are few and far between other than the ubiquitous butter.

Well Dined | Country Apple Dumplings

So what was I going to make that would feature butter?  I came up with a few ideas, but I kept circling back to these apple dumplings (even though I'd posted about them before).  They really are perfect for this movie, though - a little bit redneck, totally unhealthy, and drenched in butter.

Well Dined | Country Apple Dumplings

The dumplings are actually really easy to make.  I like them best when they are fresh and the sugar on top is still crunchy, so I tend to make half a recipe one day and the other half the next day - which is why you will only see 4 dumplings in the photos.  Start by peeling and coring an apple, then cutting into 8 slices.

Apple Galette with Salted Bourbon Caramel

Well Dined | Apple Galette with Salted Bourbon Caramel

Last month I posted about a Cranberry Custard Pie using my favorite dough recipe.  I typically use a deep dish pie plate, but for that recipe I used a shallower one.  So I had a lot of leftover dough to make something else with.  I grabbed some apples that were on their way to getting old, and made a galette.

An apple galette in and of itself is not that exciting, but this caramel sauce - with bourbon and fleur de sel - so luscious.  It really takes a basic tart over the top.

Butternut Squash, Apple, and Sausage Lasagna Rolls

Well Dined | Butternut Squash, Apple, and Sausage Lasagna

Oh my gosh, you guys.  This might be my favorite butternut squash pasta since the life-saving mac and cheese.

Well Dined | Butternut Squash, Apple, and Sausage Lasagna

Sheets of homemade pasta filled with roasted butternut squash, apple, onion, sausage, and three cheeses; topped with a creamy sage bechamel.  It's totally swoon worthy.

The filling is a little complicated, but totally worth it.  While your butternut squash is roasting in the oven, mix up and brown your sausage mixture.  Did I mention that you are creating your own sausage, so you can adjust the spices to your liking?  And you can be sure that there are no weird preservatives or sugar?  Awesome.  Anyway, next you saute some onions, garlic, and apple.  Plus a little white wine - aww, yeah.

Oh my gosh this filling.  It's insane.  You may want to make extra to use in other ways.  I'll talk about that later.

Salted Caramel Apple Hand Pies

Well Dined | Salted Caramel Apple Hand Pies

Hand pies are so much fun.  You just pick up your own personal mini-pie and munch away.  No sharing!  And when those flaky pies are filled with cinnamon spiced apples and gooey salted caramel, you won't want to share.

Putting these together is pretty easy - divide up your apple mixture among the circles of dough, top with a few bits of caramel candy, sprinkle with sea salt, place another round of dough on top.

Crimp the edges with a fork to seal, but the dough is going to puff up like puff pastry so it doesn't have to be perfect.  Egg wash and coarse sugar make the crust a beautiful golden brown.

The one issue with these is that you do have to eat them warm or the caramel will re-solidify.  If you don't eat them all immediately (which, good luck with that) you will need to reheat them before serving.  There is also quite a bit of dough in proportion to filling.  If that is not your style, make sure to roll it out extra thin.

Apple Oat Muffins

Well Dined | Apple Oat Muffins

Let's start the week out with something sweet, and not even that bad for you.  These muffins are mostly oats, held together by a little yogurt, and studded with chunks of delicious apples.  The are unbelievably moist and spiced with cinnamon.  Breakfast, dessert, whatever - these are going to get gobbled up fast.

Well Dined | Apple Oat Muffins

I used braeburn apples, but any good baking apple will do.  Some stores have little signs that tell you which apples are good for what.

Well Dined | Apple Oat Muffins

See what I mean?  There is more than 2x as much oats as there is flour.

The batter is very wet, but this is a good thing.  I would dice the apples smaller next time.

Well Dined | Apple Oat Muffins

My husband practically inhaled these bad boys.  Seriously.  Go make these.  Right now.  I'll wait...  Did you make them?  Aren't you glad you did?

Well Dined | Apple Oat Muffins

You can invite your neighbor over for muffins and hot chocolate.  I bet they'd love it.

They might even take one of the muffins you give them on an adventure to the airport.  Cuz who wants to eat airport food, right?

Christmas 2012

I wanted to do a big Christmas dinner, but I didn't want to be in the kitchen all Christmas Day. I also wanted to try something different than the usual rib roast and Yorkshire pudding. So I decided to do dinner on Christmas Eve and to do some easy, low-prep dishes for Brunch on Christmas Day.

SAM_3004

I ordered a half fresh ham through Whole Foods to try cooking a Christmas ham for the first time, but I made a few mistakes.  I wanted to cook it in the slow cooker with brown sugar and cider to make a glaze, but I didn't realize that "fresh ham" is not really what we consider ham - without the curing or smoke, it is more like a pork roast - so I didn't really get the flavor that I wanted.  I also couldn't get the whole thing to fit in my (very large) slow cooker insert, so I had to chop a chunk off - which actually ended up being a good thing because I roasted that piece and it came out better.

Quinoa Salad with Roasted Sweet Potato, Kale, Apple, and Red Onion

I recently had a lunch date with my friend Melissa of Smells Like Brownies.  As a long time vegetarian, I wanted her help to learn ways of using quinoa other than just as a substitute for rice.  She suggested that we make this Quinoa salad, chock-full of roasted veggies with a balsamic dressing.  I couldn't wait to try it!  Roasted sweet potatoes and red onion, hearty kale, sweet and tangy apples - all the beautiful flavors of Fall.
