This is super, super easy to make and incredibly delicious. I made a huge bowl this week and it was gone in two days! It takes plain old chicken salad over the top and turns it into something great.
All you need for this salad is cooked, cubed chicken (cold), mayonnaise, curry powder, and some crunchy elements – I like celery and grapes (the sweetness goes great with the curry flavors), edamame works great too. You could also try dried apricots for sweetness.
I like to use poached chicken for this – I buy a bunch of chicken breasts (much cheaper when you buy in bulk) and poach them in water or stock with celery, carrot, onion, herbs like thyme, a few peppercorns, and a little salt (careful with the salt!). Then I freeze the chicken (wrap tightly in plastic wrap first, then foil, then freezer bag) and pull it out whenever I need it – this is great for recipes that call for shredded chicken, it’s much cheaper than buying rotisserie chickens! The curry powder that I like is the Madras Curry blend from Williams Sonoma because it is a little sweet, and not spicy at all; but you can use whatever your favorite is.
All you do is mix together and enjoy! I don’t even measure, I just keep adjusting until it tastes right. I probably used about 4 cups of chicken, 1.5 cups each of celery and grapes, 1 cup of Mayo (I don’t like it to be too heavy), and 1.5 tbsp of curry powder.
