I have been saving Tasty (Buzzfeed Food) videos on Facebook like crazy. They always look so good! So this week, I declared that I must make one thing from a saved link; and I chose these decadent Chicken Bacon Alfredo Lasagna Roll-ups.
Start by cooking lasagna noodles and filling them with a mixture of cooked chicken, bacon, and Alfredo sauce (made with butter, garlic, cream, cream cheese, and Parmesan). I made some changes to the original, using 12 noodles instead of 8 and more filling per noodle to use up all the filling. I didn’t like how, in the video, there was chicken and bacon on the top instead of all contained.
Place some sauce in the bottom of a baking dish, then the roll-ups, then more sauce over the top. I reserved 1/2 of the Alfredo sauce for this purpose, not mixing all of it with the chicken.
Next, top with Mozzarella. I happened to have 8 oz of sliced mozzarella that I had no plans for, so I chose to use that instead of shredded.
Bake until golden and bubbling, and enjoy!
Chicken Bacon Alfredo Lasagna Roll-ups

serves 6-12
12 lasagna noodles
2 cups cooked, shredded chicken
1 lb bacon, cooked and crumbled
1/2 cup (1 stick) unsalted butter
2 cups heavy whipping cream
4 oz cream cheese
1 tbsp garlic powder
salt and pepper
1 cup grated Parmesan cheese
8 oz shredded (or sliced) mozzarella
Preheat oven to 350 deg F.
Cook the lasagna noodles in a large pot of salted, boiling water until al dente. Drain and rinse the noodles with cold water then lay the on a paper towel to remove excess water.
In a medium saucepan add butter, heavy whipping cream, and cream cheese, and cook over medium heat, whisking, until melted.
Add garlic powder, and season with salt annd pepper. Add the Parmesan cheese and bring to a simmer, continue to cook for about 3-5 minutes or until it starts to thicken
Spread 1/2 cup of the Alfredo sauce into the bottom of a 9×13 baking dish, reserve another 1/2 cup for later.
Combine the remaining cup of sauce with the bacon and chicken to form the filling.
Spread about 1/4 cup of the filling mixture over each noodle, rolling and placing seam down in the pan.
Pour the reserved 1/2 cup of sauce over the top and sprinkle evenly with mozzarella cheese.
Cook for about 30 minutes, until it is heated through and cheese bubbles and browns.
